Eggless Banana Cake (Nut-Free, Dairy-Free)

This rich and moist eggless banana cake tastes heavenly. First time we tried it, we couldn’t believe that this fluffy banana cake is  really eggless.
Banana Cake

1 3/4 cup   whole wheat flour
1 cup           sugar
2 tsp            baking powder
1/4 tsp        salt
3/4 cup      soy milk/ rice milk
1/2 cup      oil
1 tsp          vanilla
2 mashed bananas
1/2 cup      chocolate chips (optional)

Preheat the oven to 350 Degrees. Mash the bananas and add the rest of the ingredients. Mix with a spoon and pour into a lined pan. Bake for 50- 60 minutes or until toothpick comes out clean. Do not over-bake. Enjoy!

    Wow! This is amazingly delicious! I made it with white flour though. I dont have allergies or normally eat vegan food so its not just delicious by those standards. It is amazing because you wouldnt think it would be so good without egg and dairy products.

    We didn’t have soy milk, so we made it with two very full spoons of peanut butter melted into water (forms together 3/4 a cup) and a bit less oil, since the peanut butter is relatively fat. Turned out great!
